Are you in search of a Greek feast? Prepare beef koftas with barley, served with a cucumber salad and tzatziki sauce!
Ingredients
- Onion – 1 piece
- Cinnamon – 0.25 teaspoon
- Garlic clove – 1 piece
- Ground ginger – 0.25 teaspoon
- Egg – 1 piece
- Barley groats – 28 g
- Ground cumin – 0.5 teaspoon
- Ground beef – 500 g
- Fresh mint – 0.25 teaspoon
- Oil – 1 tablespoon
- Red chili pepper – 0.5 teaspoon
- Grains Cayenne pepper – 1 teaspoon
- Sweet paprika – 0.25 teaspoon
- Salt – a pinch
Cucumber salad
- Lime – 1 piece
- Parsley – 5 g
- Cucumber – 2 pieces
- Olive oil – 1 tablespoon
- Black pepper – a pinch
- Radish – 6 pieces
- Salt – a pinch
Tzatziki sauce
- Garlic cloves – 2 pieces
- Greek yogurt – 400 g
- Cucumber – 1 piece
- Salt – a pinch
Preparation
Combine Kofta Ingredients Soak skewers in cold water for 30 minutes. Place the meat in a bowl. Add finely chopped onion, garlic, chili pepper, cooked barley, and egg. Season with all the spices and knead thoroughly. Divide into 12 elongated sausages and wrap around skewers, set aside.
Prepare Cucumber Salad Peel and halve the cucumbers lengthwise, remove the seeds, and cut into half slices. Slice the radishes, and finely chop the parsley. Combine all the ingredients in a bowl. Season with salt and pepper. Drizzle with lime juice and olive oil.
Prepare Tzatziki Sauce Peel the cucumber, remove the seeds, and grate using a coarse grater. Drain excess water and place in a bowl. Crush garlic with salt in a mortar and add to the cucumber along with Greek yogurt. Mix well and refrigerate.
Grill the Koftas Heat a grill pan. Drizzle the meat with oil and grill on both sides for about 7 minutes until golden brown. Serve the cooked koftas with tzatziki sauce and cucumber salad.
