Preparation

Braise the Spare Ribs in Sourdough Season the spare ribs with salt and white pepper. Sear in a pan with heated oil, then transfer to an ovenproof dish. Chop the onion and garlic and sauté. Pour sourdough over the spare ribs along with vinegar. Add the sautéed onion and garlic. Place rosemary sprigs, honey, and chopped chili pepper into the dish. Braise the spare ribs covered over low heat for about 2.5 hours until the meat is tender. After this time, pour the sauce into a small saucepan, add 100 g of butter, and reduce over low heat until thickened. Season with salt and pepper. Grill the spare ribs on a grate or grill pan.

Roast the Carrots Boil the carrots. Peel the young carrots, leaving some of the green stem. Boil whole in lightly salted water until tender. Then wrap in aluminum foil, add a slice of butter, and roast on a grill or bake in an oven preheated to 180°C until golden brown.
