Ingredients
- Salmon 350g
- Avocado 1 piece
- Sun-dried tomatoes 8g
- Olive oil 80g
- Lemon juice 2 pieces
- Tabasco to taste
- Salt to taste
- Chives to taste
Sauce:
- Egg yolks 2 pieces
- Mustard 1 tablespoon
- Lemon juice 1/2 piece
- Olive oil 120ml
- Dill 1/2 bunch
- Parsley 1/2 bunch
- Anchovies (optional)
Preparation
- Finely chop the salmon and season with salt, pepper, and Tabasco to taste. Dice the avocado and sun-dried tomatoes into small cubes, mix them together, and add lemon juice. Season with salt and pepper, then mix again.
- For easier shaping, prepare 4 metal or plastic molds lined with cooking paper. Arrange the tartare in the molds, and top with the avocado and sun-dried tomatoes. Remove the molds before serving.
- Sauce: Blend all sauce ingredients together. Prepare 4 sheets of cooking paper. Shape each into a cone for decoration and fill with the prepared sauce. Place the cones on the plate next to the dish so that everyone can add the sauce according to their taste.
