Ravioli with Meat

Ingredients

For the Dough

  • Durum wheat flour – 500 g
  • Eggs – 3 pieces
  • Olive oil – 20 ml
  • Water – 15 ml
  • Salt – 1.5 g

For the Filling

  • Ground pork – 300 g
  • Parmesan cheese – 120 g
  • All-purpose flour – 40 g
  • Olive oil – 20 ml
  • Onion – 1 piece
  • Garlic cloves – 2 pieces
  • Egg – 1 piece
  • Salt – 1.5 g
  • Black pepper – 1 g
  • Fresh basil – 2 sprigs

For the Sauce

  • Zucchini – 1 piece
  • White wine – 100 ml
  • Butter – 30 g
  • Olive oil – 20 g
  • Garlic cloves – 2 pieces
  • Cherry tomatoes – 10 pieces

Preparation

Ravioli:

Prepare the Ingredients Sift the flour into a large bowl, then add all the dry ingredients needed to make the dumplings and mix them.

Add Eggs and Olive Oil Add eggs and olive oil to the bowl.

Knead the Dough Start kneading the dough gently until the ingredients are well combined. You can add a little water if the dough is too dry, and if it’s too sticky, add a little flour.

Form the Dough On a floured surface, lay out the dough and start kneading it again for 5-6 minutes. When it stops being sticky, form it into a ball and wrap it in plastic wrap. Set aside for 40 minutes. This is a good time to prepare the filling.

Roll out the Dough Remove the dough from the plastic wrap, then roll it out thinly. Divide the dough into equal rectangles.

Filling:

Prepare the Vegetables Peel and finely chop the onion and garlic.

Sauté the Vegetables In a pan, sauté the garlic and onion in a bit of olive oil.

Add the Meat Once the vegetables are golden brown, add the meat. Season with salt and pepper, stir, and sauté for a few minutes.

Finish the Filling Grate the Parmesan cheese. Let the meat cool, then add the Parmesan, egg, and fresh herbs. Mix well.

Fill the Ravioli On each of the dough rectangles, place about a teaspoon of filling (on one half), then cover it with another rectangle, creating a square dumpling. When you fill all the dumplings, decorate the edges with a fork by pressing it against the edges.

Cook the Ravioli Place a pot on the stove and pour in 1.5 liters of water. Once the water starts boiling, season it with salt and add the dumplings one by one. Cook for 4-5 minutes until the dumplings float to the surface. After cooking, pour a bit of water into a cup, then drain the dumplings and set aside.

Sauce:

Prepare the Ingredients Thoroughly wash the zucchini and cut it into half-moons. Peel and finely chop the garlic. Cut the cherry tomatoes in half.

Sauté the Ingredients In a deep pan, pour in olive oil and butter. Add the vegetables and season them lightly.

Finish the Sauce Once the vegetables are lightly browned, add the wine and let it reduce for a while. Towards the end of cooking, add the water from the pasta as well. Stir and cook for 4-5 minutes.

Add the Ravioli Towards the end of cooking, add the ravioli and let them simmer for a while. Serve the finished ravioli with sauce on plates and sprinkle with cheese or herbs.
