Huevos Rancheros

Huevos rancheros, or the idea for a delicious and filling Mexican-style breakfast! Fried eggs served with bacon on a crispy tortilla spread with bean paste, topped with tomato salsa and avocado. Huevos rancheros is a great way to start the day.


  • bacon (boiled/smoked), 80 g
  • onion (small, half), 1/2
  • red beans with brine, 150 g
  • spices: salt and pepper, optional pinch of cumin and smoked paprika
  • tortilla (large, 1 or small, 2)
  • butter, 2 teaspoons
  • eggs, 2
  • tomato or cherry tomatoes, 1 or 10
  • red onion (quarter), 1/4
  • avocado (half), 1/2
  • to serve: fresh cilantro and lime, optional chili or jalapeno slices


Dice the bacon, place it in a pan, and render the fat over low heat. Transfer the bacon to a plate, leaving the fat in the pan.

Sauté the finely chopped onion in the remaining fat until translucent. Add the beans with a few tablespoons of brine and spices. Heat for a while, then mash everything with a potato masher into a relatively uniform paste.

Heat a teaspoon of butter in a large pan and fry the tortilla. Transfer the tortilla to a plate, then add another teaspoon of butter to the pan and fry the eggs.

Meanwhile, prepare the tomato salsa: dice the tomato and finely chop the red onion.

Spread the tortilla with the bean paste, place the fried eggs, sautéed bacon, and tomato salsa on top. Add sliced avocado, sprinkle with cilantro, season with salt and pepper. Drizzle the avocado and salsa with lime juice, optionally add chili or jalapeno slices.
