  • chicken breast fillet, 500 g
  • salt and pepper
  • flour, 1 tablespoon
  • egg, 1
  • milk, 3 tablespoons
  • breadcrumbs or panko, 4 tablespoons
  • clarified butter or oil for frying

Ranch Dressing:

  • garlic clove, 1
  • yogurt, 1/2 cup
  • cream, 1/2 cup
  • mayonnaise, 2 tablespoons
  • chopped chives, 4 tablespoons

Salad Topping:

  • arugula, 1 cup
  • extra virgin olive oil, 2 teaspoons
  • radishes (or a handful of cherry tomatoes), 4

Slice the chicken into smaller portions and gently pound them into thinner fillets. Season with salt and pepper, and set aside.

Prepare the ranch dressing by mixing the pressed garlic with salt, pepper, yogurt, cream, mayonnaise, and chopped chives.

Wash and dry the arugula, then mix it with olive oil. Slice the radishes into thin slices.

Dust the chicken with flour, shaking off any excess. Crack the egg into a deep plate, add the milk, and whisk together. Dip the fillets first in the egg mixture, then in the breadcrumbs. Place them in a hot pan with clarified butter or oil and fry until golden on both sides.

Place the chicken on plates, drizzle the middle with ranch dressing, add the arugula, and garnish with radish slices.
