Creamy roasted cauliflower soup with peanut butter

  • Vegetable broth – 1 liter
  • Onion – 1 piece
  • Curry powder – 1 teaspoon
  • Ground nutmeg – a pinch
  • Cauliflower – 1 head
  • Peanut butter – 3 tablespoons
  • Parsley – 5 grams
  • Olive oil – 5 tablespoons
  • Black pepper – a pinch
  • Lemon juice – 25 ml
  • Salt – a pinch
  • Dried thyme – 2 tablespoons
  • Potato – 1 piece


Dice the onion and sauté it in a pot with heated olive oil. Add diced potato. Once the onion becomes translucent, add thyme. Mix well. Sauté for a while and add roasted cauliflower divided into smaller florets. Mix again and sauté for a moment until the flavors combine.

Pour vegetable broth over the sautéed vegetables. Cook for about 15-20 minutes until the potatoes are tender. Add peanut butter. Mix well. Blend the soup with a blender until smooth, creating a creamy consistency.

Season the cauliflower cream soup with salt, black pepper, ground nutmeg, curry powder, and lemon juice. Just before serving, drizzle with olive oil. Garnish with parsley leaves on top.
