Cauliflower couscous tabbouleh

Discover tabbouleh in a new version! Cauliflower couscous, fresh vegetables, and pine nuts make for a delicious twist on this classic dish. Definitely worth a try!


  • Red onion – 0.5 pieces
  • Cauliflower – 1 piece
  • Flat-leaf parsley – 20 g
  • Olive oil – 3 tablespoons
  • Pine nuts – 30 g
  • Black pepper – a pinch
  • Cherry tomatoes – 100 g
  • Lemon juice – 50 ml
  • Salt – a pinch
  • Fresh mint – 2 g
  • Cucumber – 1 piece


Break the cauliflower into small florets and process them in a food processor until they resemble couscous. If you don’t have a food processor, grate the cauliflower using a fine grater. Transfer the processed or grated cauliflower to a bowl.

Add finely chopped red onion and cucumber, as well as quartered cherry tomatoes to the bowl. Add lemon juice, olive oil, toasted pine nuts, and finely chopped herbs: parsley and mint. Season with salt and pepper. Mix well and serve in a large bowl.
