Ingredients
- Red onion – 0.5 pieces
- Cauliflower – 1 piece
- Flat-leaf parsley – 20 g
- Olive oil – 3 tablespoons
- Pine nuts – 30 g
- Black pepper – a pinch
- Cherry tomatoes – 100 g
- Lemon juice – 50 ml
- Salt – a pinch
- Fresh mint – 2 g
- Cucumber – 1 piece
Preparation
Break the cauliflower into small florets and process them in a food processor until they resemble couscous. If you don’t have a food processor, grate the cauliflower using a fine grater. Transfer the processed or grated cauliflower to a bowl.
Add finely chopped red onion and cucumber, as well as quartered cherry tomatoes to the bowl. Add lemon juice, olive oil, toasted pine nuts, and finely chopped herbs: parsley and mint. Season with salt and pepper. Mix well and serve in a large bowl.
