Ingredients
- Beef tenderloin 250 grams
- Whole capers 50 grams
- Egg yolks 3 pieces
- Pickled cucumbers 3 pieces
- Salt
- Black pepper
- Soup and dishes seasoning
- Oil 5-6 tablespoons
- Baguette 1 piece
- Dried Provencal herbs
Preparation
- Grind or finely chop the beef tenderloin twice and transfer it to a bowl. Add 1 egg yolk, salt, freshly ground black pepper, a few drops of liquid seasoning, oil, and mix everything thoroughly with your hands. Finally, add half of the capers and half of the chopped onion and mix everything together.
- Form two portions, make an indentation in the middle of each and place an egg yolk in it. Next to it, arrange the toppings: chopped onion, remaining capers, and diced pickled cucumbers.
- Slice the baguette. Drizzle each slice with oil, sprinkle with dried Provencal herbs, and lightly fry in a pan until they turn golden brown.
