Oriental shrimp meatballs served with juicy grapefruit and a touch of ginger and soy sauce. Definitely worth a try!
Ingredients
- Brown sugar – 1 teaspoon
- Breadcrumbs – 2 tablespoons
- Spring onions – 2 pieces
- Sugar – a pinch
- Grapefruit – 1 piece
- Fresh ginger – 20 g
- Egg white – 1 piece
- Sunflower oil – 4 tablespoons
- Potato starch – 3 tablespoons
- Lemon juice – 25 ml
- Soy sauce – 3 teaspoons
- Fresh coriander – 22 g
- Shrimp – 250 g
- Garlic clove – 1 piece
- Sambal oelek – 1 teaspoon
Preparation
Rinse, defrost, and pat dry the shrimp.
Peel the garlic, clean the spring onions, and finely chop both along with the shrimp. Season with 2 teaspoons of soy sauce, lemon juice, sugar, and sambal oelek. Add starch and lightly beaten egg white, mix well, and shape into 16 meatballs. Coat with breadcrumbs and fry in hot oil in a pan for about 4 minutes. Drain on paper towels and skewer onto wooden skewers.
Filet the grapefruit, collecting the juice. Dice the fileted grapefruit finely. Peel and chop the ginger. Clean and chop the coriander. Mix all ingredients with soy sauce, season with sugar, and serve with the skewers.
