Asian Prawn & Pineapple Salad

This salad is not only tasty but also visually appealing with its vibrant colours. It’s sure to impress your guests at your next party. The combination of sweet pineapple, juicy prawns and fresh vegetables creates a refreshing and delicious taste. The tangy lime and fish sauce dressing adds an Asian twist that will tantalise your taste buds.


  • 1 small pineapple or 350g pineapple chunks
  • 140g bean sprouts
  • 250g cooked king prawns
  • ½ cucumber, peeled, seeded and diagonally sliced
  • 200g cherry tomatoes, halved
  • handful of mint leaves, very roughly chopped
  • 50g unsalted cashews, toasted if you like

For the dressing

  • ½ red chilli, seeded and sliced
  • 1 clove of garlic
  • 1 tsp golden caster sugar
  • juice of 2 limes
  • 1½ tsp fish sauce

Method of preparation:

In a large bowl, combine the pineapple chunks, bean sprouts, cooked king prawns, cucumber slices, halved cherry tomatoes, chopped mint leaves and toasted cashews.

In a small bowl, combine the sliced red chilli, crushed garlic clove, golden caster sugar, lime juice and fish sauce. Stir until the sugar is completely dissolved.

Pour the dressing over the salad and toss to combine. Make sure all the ingredients are well coated with the dressing.
