Ingredients

  • White beans – 240g
  • Arugula – 2 handfuls
  • Cherry tomatoes – 6
  • Red bell pepper – 1
  • Red onion – 1/2
  • Spring onion – 1/4 bunch
  • Garlic clove – 1
  • Salt – a pinch
  • Mixed colored pepper – 3 pinches

Preparation

Dice the bell pepper, onion, and cherry tomatoes into small pieces. Finely chop the spring onion and garlic.

In a bowl, mix arugula, cooked white beans, and chopped vegetables. Season with salt and mixed colored pepper. Mix well.
