Pulled pork

Discover the exceptional American recipe for pulled pork – with the addition of maple syrup, tomatoes, and chili! Tastes excellent with fresh baguette!

Ingredients

  • Baguette – 6
  • Onions – 2
  • Spring onions – 2
  • Lemon – 1
  • Garlic cloves – 2
  • Whole cumin seeds – 1 tablespoon
  • Pork shoulder – 1 kg
  • Sweet paprika powder – 2 tablespoons
  • Ground chili – 1 teaspoon
  • Rapeseed oil – 2 tablespoons
  • Olive oil – 1 tablespoon
  • Tomato passata – 690 ml
  • Black pepper – a pinch
  • Soy sauce – 3 tablespoons
  • Salt – a pinch
  • Dried marjoram – 2 tablespoons
  • Maple syrup – 2 tablespoons
  • Fresh coriander – 1 tablespoon

Preparation

  • Preheat the oven to 150°C.
  • Use a cast-iron dish.

Season the meat with salt and pepper on both sides. Heat the rapeseed oil in the preheated cast-iron dish and sear the meat. Remove the meat from the dish and set aside.

Add sliced garlic and thinly sliced onions to the dish – sauté until translucent. Add sweet paprika, chili, and marjoram. Sauté everything. Return the meat to the dish. Add soy sauce, tomatoes, and maple syrup. Season with cumin seeds.

Cover the dish and transfer it to the preheated oven at 150°C. Bake for 5 hours.

Shred the meat with a fork. Chop coriander, slice onions, season with salt, drizzle with olive oil and lemon juice, mix everything with the meat. Cut the baguette in half. Spread the reduced pork sauce on it. Arrange the meat and cover with the other half of the baguette.
