Ingredients
- Beef tenderloin 150g
- Egg yolks 2 pieces
- Capers 10g
- French mustard 10g
- Anchovies 10g
- White onion 30g
- Pickled cucumber 30g
- Olive oil 20g
- Salt, to taste
- Ground black pepper
Preparation
Slice the meat along the grain into thin strips, a few millimeters thick, removing any membranes, then chop across the grain into small cubes. Optionally, after removing the membranes, you can grind it in a meat grinder. Mix the prepared beef with olive oil, egg yolks, finely diced onion, and cucumber. Divide the mixture into 3 parts. To each part, add a different ingredient: French mustard, anchovies, or capers. Finally, season to taste with salt and pepper.
