Tortilla with Egg and Bacon

A great way to start the day or a quick snack – tortillas with sunny-side-up eggs in tomatoes, bacon, and herbed cream cheese!

Ingredients

  • Bacon slices – 80 g
  • Eggs – 8 pieces
  • Lime – 0.5 piece
  • Butter – 2 tablespoons
  • Parsley – 5 g
  • Cayenne pepper, whole – 1 teaspoon
  • Red tomato – 1 piece
  • Cream cheese – 150 g
  • Salt – 1 pinch
  • Fresh mint – 2 g
  • Tortillas – 4 pieces

Preparation

Step 1: Season the Cream Cheese Wash the herbs, pluck the leaves, and chop them. Mix with the cream cheese and grated lime zest along with a bit of lime juice, season with salt and cayenne pepper.

Step 2: Fry the Eggs with Tomatoes Clean and slice the tomato into thin slices. Fry the bacon in a pan until crispy, then set aside. Melt butter in the pan, briefly fry the tomato slices on both sides. Crack the eggs and add them to the tomato slices, fry until sunny-side-up.

Step 3: Prepare the Tortillas Heat the tortillas one by one in a dry pan until they become flexible. Spread with cream cheese and sprinkle with bacon. Place 2 sunny-side-up eggs with tomatoes on each tortilla, lightly season with salt, and serve immediately.
