Cheesy Amish Breakfast Casserole

Whether you’re cooking for your family or hosting a brunch, this casserole is sure to impress with its classic flavours and hearty ingredients. You can prepare this casserole the night before, refrigerate it and simply bake it in the morning. It’s perfect for stress-free entertaining or busy mornings.

Ingredients:

  • 1lb bacon, diced
  • 1 medium onion, chopped
  • 9 eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, defrosted
  • 2 cups grated cheddar cheese
  • 1 1/2 cups small curd cheese
  • 1 1/4 cups grated Swiss cheese

Method of preparation:

Preheat the oven to 350 degrees F (175 degrees C).

In a skillet, cook the bacon and onion until the bacon is crisp; drain.

In a large bowl, combine the eggs, hash browns, cheddar, cottage and Swiss cheeses.

Stir in the bacon and onion mixture.

Pour into a greased 9×13 inch baking dish.

Bake uncovered for 35-40 minutes or until a knife inserted in the centre comes out clean.
