Cheesy Amish Breakfast Casserole

You can prepare this casserole the night before, refrigerate it and simply bake it in the morning. It’s perfect for stress-free entertaining or busy mornings.


  • 1lb bacon, diced
  • 1 medium onion, chopped
  • 9 eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, defrosted
  • 2 cups grated cheddar cheese
  • 1 1/2 cups small curd cheese
  • 1 1/4 cups grated Swiss cheese

Method of preparation:

Preheat the oven to 350 degrees F (175 degrees C).

In a skillet, cook the bacon and onion until the bacon is crisp; drain.

In a large bowl, combine the eggs, hash browns, cheddar, cottage and Swiss cheeses.

Stir in the bacon and onion mixture.

Pour into a greased 9×13 inch baking dish.

Bake uncovered for 35-40 minutes or until a knife inserted in the centre comes out clean.
