Wegan Panini with King Oyster Mushrooms and Aioli Sauce

Warm sandwiches are doubly delicious! Vegan panini will win everyone over with the taste of fried king oyster mushrooms and velvety aioli sauce. Give it a try!


Vegan Panini

  • Ciabatta bread – 2 pieces
  • King oyster mushrooms – 4 pieces
  • Olive oil – 20 ml
  • Fresh spinach – 4 handfuls

Aioli Sauce

  • Garlic cloves – 3 pieces
  • Mustard – 2 teaspoons
  • Cashew nuts – 170 g
  • Lemon juice – 25 ml
  • Salt – 1 pinch
  • Water – 125 ml


Step 1: Saute the King Oyster Mushrooms Saute the caps of king oyster mushrooms in olive oil in a heated pan for 4 minutes on each side. Season with salt and pepper towards the end of cooking.

Step 2: Prepare the Aioli Sauce Drain the cashew nuts and blend them in a blender with the remaining sauce ingredients until smooth and uniform.

Step 3: Assemble the Sandwiches Cut the rolls in half and generously spread them with aioli sauce. Place spinach or arugula on the bottom half of the roll and add the sautéed king oyster mushrooms. Cover with the top half of the roll. Gently press.

Transfer the rolls to an electric grill and bake for about 4-5 minutes.
