Spinach Soup with Feta

A delicious dish for spinach lovers – a creamy soup with a beautiful vibrant color, seasoned with feta cheese and chives.


  • Spring onion 2
  • Vegetable broth 1 l
  • Black pepper 1 pinch
  • Garlic clove 1
  • Ground nutmeg 1 pinch
  • All-purpose flour 1 tsp
  • Olive oil 2 tbsp
  • Feta cheese 100 g
  • Salt 1 pinch
  • Baby spinach 600 g
  • Heavy cream (30%) 100 g


Chop the white part of the spring onions and garlic and sauté in hot olive oil until translucent. Sprinkle with flour and briefly fry. Pour in hot broth and bring to a boil.

Add the frozen spinach and cook covered for about 10 minutes until the spinach is thawed, stirring occasionally.

Chop the green part of the spring onions very finely. Crumble the feta and mix with the chives.

Season the soup with cream and lightly blend. Season with salt, pepper, and nutmeg to taste. When serving, sprinkle the soup with pieces of feta mixed with chives and ground black pepper.
