Healthy 5 minute avocado toast

Avocado toast can be customised with a variety of toppings to suit your taste or dietary needs, making it a versatile option for any meal. The combination of healthy fats and fibre gives you a long-lasting energy boost without the crash of sugary breakfast options.


  • 1 avocado (peeled and seeded)
  • 2 tablespoons chopped coriander
  • Juice of 1/2 lime
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt (to taste)
  • Pepper (to taste)
  • 2 slices of bread (wholemeal or your choice)
  • 2 eggs (fried, scrambled or poached, optional)

Method of preparation:

In a bowl, mash the avocado with a fork until it reaches the desired consistency.

Stir in the chopped coriander, lime juice, red pepper flakes (if using), salt and pepper.

While preparing the avocado, toast the slices of bread to your preferred crispness.

If you’re using eggs, cook them to your liking – fried, scrambled or poached.

Spread the avocado mixture evenly over the toasted slices of bread.

If you’re using eggs, place them on top of the avocado spread.

Enjoy your avocado toast immediately for the best flavour and texture.
