Ingredients

  • Red onion – 1
  • Tasmanian caviar – 4 teaspoons
  • Fresh dill – 24 g
  • 18% sour cream – 3 tablespoons
  • Smoked salmon – 400 g
  • Vinegar – 3 tablespoons
  • Cucumber – 1
  • Pumpkin seed oil – 4 tablespoons
  • Black pepper – a pinch
  • Watercress – 10 g
  • Orange zest, grated – 1 tablespoon
  • Salt – a pinch
  • Grated horseradish – 1 tablespoon

Preparation

Peel the onion and slice it thinly. Transfer to a bowl and cover with half of the vinegar. Dice the smoked salmon finely and mix it with the marinade made from orange zest, salt, pepper, horseradish, and 1 teaspoon of sour cream.

Wash the cucumber and cut it into long, thin strips using a vegetable peeler. Lightly salt and marinate it in the remaining vinegar. Sprinkle the cucumber with dill and watercress.

Arrange the salmon tartare on a plate, shaping it into a ring or circle. Garnish with marinated onion, remaining sour cream, and caviar. Place the marinated cucumber salad next to it and garnish with herbs. Drizzle the entire dish with pumpkin seed oil.
