Ingredients

Patties:

  • Seed and nut mix: 20 g
  • Cauliflower: 150 g
  • Ground flaxseed: 1 tablespoon
  • Garlic clove: 1
  • Fresh mint: 1 tablespoon
  • Fresh parsley: 1 tablespoon
  • Tahini paste: 1 tablespoon
  • Lemon juice: 1 tablespoon
  • Ground coriander: 0.25 teaspoon
  • Cumin: 0.25 teaspoon
  • Salt: 1 pinch
  • Olive oil: 1 tablespoon

Serving:

  • Hummus: 80 g
  • Fresh edamame beans: 50 g
  • Fresh cilantro: 1 tablespoon
  • Cherry tomatoes: 100 g
  • Pumpkin seeds: 1 tablespoon

Preparation

Step 1: Prepare the Patty Mixture Dry roast the seed and nut mix on a skillet. In a food processor, pulse the cauliflower until it resembles coarse crumbs. Add the remaining ingredients, including the roasted seeds and nuts. Process until a uniform mixture forms.

Step 2: Shape the Patties Gently shape the mixture into elongated patties. Fry them in heated oil until golden brown on both sides.

Step 3: Assemble the Salad Arrange hummus, cauliflower patties, cherry tomatoes, fresh cilantro, and edamame beans on a plate. Sprinkle with pumpkin seeds.
