Grilled Vegetable Sandwich

Grilled vegetables paired with fluffy bread, fresh oregano, and olive oil. This sandwich suits any occasion!

Ingredients

  • Eggplant – 1 piece
  • Onion – 1 piece
  • Zucchini
  • Black olives – 45 g
  • Black pepper – 1 pinch
  • Red tomato – 1 piece
  • Olive oil – 1 tablespoon
  • Fresh oregano – 1 tablespoon
  • Ciabatta bread – 1 piece
  • Garlic clove – 1 piece

Preparation

  1. Slice the ciabatta lengthwise.
  2. Slice the vegetables: eggplant, zucchini, tomato, onion rings, and garlic, then grill them on a grill pan.
  3. Cut the olives into strips.
  4. Layer the grilled vegetables on the bottom half of the sandwich: tomato, onion, eggplant, zucchini, and garlic.
  5. Decorate with olives and oregano, season with freshly ground black pepper and salt, and drizzle with olive oil.
