English Breakfast Muffins with Cream Cheese

There’s nothing quite like homemade breakfast muffins! These wonderfully fluffy English breakfast muffins with cream cheese are a proposition that you’ll remember for a long time!



  • Brown sugar, 1 tablespoon
  • Egg, 1
  • Butter, 2 tablespoons
  • Corn flour, 20 g
  • All-purpose flour, 350 g
  • Milk, 230 ml
  • Salt, 0.75 teaspoon
  • Salt, 1 tablespoon
  • Fresh yeast, 15 g

Cream Cheese:

  • Pickled cucumber, 2 pieces
  • Black pepper, a pinch
  • Red tomato, 1
  • Radish, 6 pieces
  • Cottage cheese, 300 g
  • Salt, a pinch
  • Chopped green onion, 2 tablespoons


Step 1: Prepare the Starter Gently heat the milk in a saucepan and combine it with yeast, sugar, and a tablespoon of flour. Mix the starter and let it rest for 10 minutes.

Step 2: Knead the Dough Place flour, starter, egg, and melted butter in a stand mixer bowl. Knead the mixture using a dough hook for about 10 minutes (you can also knead the dough by hand).

If the dough is too sticky, add a bit more flour. Cover the bowl with the kneaded dough with a kitchen towel and let it rise for an hour.

Step 3: Shape the Dough into Muffins After an hour, knead the dough again. Divide the dough into 10 pieces. Form each piece into a ball and place it on a baking tray dusted with corn flour. Gently flatten each ball with your hand.

Cover the muffins with a linen cloth and let them rise again for an hour.

Step 4: Bake the Muffins Heat a dry skillet over the stove for about 3 minutes. Remove it from the heat. Carefully transfer the muffins onto the skillet and bake for 2 minutes on each side. Then transfer the muffins back onto the baking tray and place them in an oven preheated to 120°C. Bake for 10 minutes. Let them cool after removing from the oven.

Step 5: Prepare the Cream Cheese Transfer the cottage cheese into a bowl. Add diced radishes, tomato, and cucumbers. Add chopped green onion. Season with salt and pepper. Mix everything well.

Step 6: Serve the Muffins with Cream Cheese Slice the breakfast muffins in half. Spread butter on each half. Spread the bottom half with cream cheese and cover it with the top half of the muffin.
