Cucumber, Tomato and Red Onion Salad

A dish that celebrates the simplicity of fresh produce, this salad is a medley of juicy tomatoes, crunchy cucumbers and sharp red onions, all brought together with the bright zest of lime juice. The addition of fresh coriander adds a burst of herbal freshness that enhances the natural sweetness and texture of the vegetables.

Ingredients:

  • 4 tomatoes, sliced into 8 wedges
  • 2 large cucumbers, peeled and sliced
  • 1 large red onion, chopped
  • ΒΌ cup chopped fresh coriander
  • Juice of 1 lime
  • Salt to taste

Method of cooking:

In a large salad bowl, combine the tomato wedges, sliced cucumber and chopped red onion.

Sprinkle the chopped fresh coriander over the vegetables. Drizzle the lime juice over the salad and toss gently to combine.

Season to taste with salt. For an extra kick, add a pinch of black pepper or chilli flakes if you like a bit of heat.

Chill the salad in the fridge for about 15 minutes to allow the flavours to meld. Give it a final toss before serving.
