Beefsteak Tartare (Beef Tartare)

  • Beef tenderloin: 500 grams
  • Egg yolks: 4 pieces
  • Pickled cucumbers: 4 pieces
  • Onion: 2 pieces
  • Soup and dish seasoning
  • Freshly ground pepper
  • Olive oil
  • Fine-grain iodized sea salt


Grind or finely chop the meat. Dice the onion and pickled cucumbers for the tartare. Season the meat with salt and pepper, Maggi seasoning or Worcestershire sauce, and mix well.

You can also add a little mineral water or previously boiled cold water to the meat, which will make the tartare softer. Shape the meat into a ball and place it on a plate, making a hollow in the center. Place the egg yolk in the hollow. Arrange finely chopped additions around the tartare.
