Baked Asparagus with Egg

With cherry tomatoes and blue cheese.


  • 1/2 bunch asparagus
  • 1 teaspoon butter
  • 100 g cherry tomatoes
  • Salt, pepper
  • 1 tablespoon extra virgin olive oil
  • 2 eggs
  • 60 g blue cheese
  • 2 tablespoons grated Parmesan or Grana Padano
  • For serving: Fresh herbs (e.g., basil, chives) and baguette


Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Grease the bottom of a baking dish with butter.

Rinse the asparagus and snap off the tough, woody ends (they will break naturally at the right spot). Place them in the baking dish.

Add halved cherry tomatoes around the asparagus, season everything with salt and pepper, and drizzle with olive oil.

Crack 2 eggs over the vegetables, then sprinkle with diced blue cheese and grated Parmesan or Grana Padano.

Bake uncovered for 18-20 minutes until the eggs are set and the cheese is melted and slightly golden.

Sprinkle with fresh herbs and serve with crusty bread, such as baguette.
