Spinach soup with feta

A delicious dish for spinach lovers – a creamy soup with a beautiful vibrant color, seasoned with feta cheese and chives.


  • Spring onions – 2
  • Liter vegetable broth – 1 liter
  • Black pepper – a pinch
  • Clove of garlic – 1
  • Ground nutmeg – a pinch
  • All-purpose flour – 1 teaspoon
  • Olive oil – 2 tablespoons
  • Feta cheese – 100 g
  • Salt – a pinch
  • Baby Spinach – 600 g
  • Heavy cream (30%) – 100 g


Chop the white parts of the spring onions and garlic, then sauté them in hot olive oil until translucent. Sprinkle with flour and briefly sauté. Pour in the hot vegetable broth and bring to a boil.

Add the frozen spinach and simmer covered for about 10 minutes until the spinach is thawed, stirring occasionally. Finely chop the chives. Crumble the feta cheese and mix with the chives.

Season the soup with cream and lightly blend. Season with salt, pepper, and nutmeg to taste. When serving, sprinkle the soup with pieces of feta cheese mixed with chives and ground black pepper.
