- Arugula – 2 handfuls
- Cherry tomatoes – 6
- Red bell pepper – 1
- Red onion – 1/2
- Spring onion – 1/4 bunch
- Garlic clove – 1
- Salt – a pinch
- Mixed colored pepper – 3 pinches
Preparation
Dice the bell pepper, onion, and cherry tomatoes into small pieces. Finely chop the spring onion and garlic.
In a bowl, mix arugula, cooked white beans, and chopped vegetables. Season with salt and mixed colored pepper. Mix well.
