These wonderful pockets are filled with juicy apples and topped with crispy crumble. The perfect dessert for a summer afternoon.

- Powdered sugar – 10 g
- Fresh mint – 2 g
- Plant-based yogurt – 4 tablespoons
Baked apples
- Brown sugar – 75 g
- Cinnamon – 2 teaspoons
- Oats – 55 g
- Baking powder – 0.5 teaspoon
- Coconut oil – 110 g
- Wheat flour – 85 g
- Red apples – 4 pieces
Preparation
Step 1: Hollow out the Apples Cut the apples in half and hollow out the cores using a spoon. Place each apple half on a piece of aluminum foil. The foil should be wide enough to wrap the apples completely.
Step 2: Season the Apples Mix cinnamon in a bowl with 3 tablespoons of brown sugar. Mix well and sprinkle evenly over the apple flesh.
Step 3: Prepare the Vegan Crumble In another bowl, thoroughly mix coconut oil, the remaining brown sugar, flour, oats, and baking powder. Fill the hollowed cores generously with the vegan crumble.
Step 4: Grill or Bake the Apples Wrap the apples with the crumble in aluminum foil and place on the rack of a preheated grill or on a baking sheet. Grill for about 20 minutes or bake in a preheated oven at 180°C for about 20 minutes.
Step 5: Serve the Apples Carefully open the hot apple pockets and transfer them to plates. Dust with powdered sugar sifted through a sieve. Serve with a portion of plant-based yogurt. Garnish with fresh mint leaves.
