Stuffed Cherry Tomatoes

Stuffed Cherry Tomatoes

An unexpected visit from guests? It’s worth having a quick recipe on hand for a warm tomato snack with cheese filling.

  • Cherry tomatoes – 24 pieces
  • Country bread – 60 g
  • Butter – 2 tablespoons
  • Parsley – 2 tablespoons
  • Black pepper – a pinch
  • Salt – a pinch
  • Fresh basil – 1 tablespoon
  • Grated Grana Padano cheese – 80 g

Trim the bottom part of the cherry tomatoes (we will arrange the tomatoes with the top part facing downwards) and carefully scoop out the flesh using a teaspoon. Sprinkle the inside of the tomatoes with salt and arrange them on a baking sheet lined with parchment paper.

Transfer the grated cheese, parsley, basil, and softened butter to a blender. Remove the crust from the bread slices, cut the flesh into smaller pieces, and add them to the other ingredients. Blend until the mixture resembles breadcrumbs. Season to taste with salt and pepper.

Fill the cherry tomatoes tightly with the prepared mixture. Bake in an oven preheated to 180 degrees Celsius for approximately 20 minutes, until the top of the filling is golden brown. Serve immediately after baking.
