Stuffed Cherry Tomatoes

Stuffed Cherry Tomatoes

Unexpected guests? It’s worth having a quick recipe for warm tomato snacks with cheese filling up your sleeve.

  • 24 Cherry Tomatoes
  • 60 g Country Bread
  • 2 tablespoons Butter
  • 2 tablespoons Parsley
  • a pinch of Black Pepper
  • a pinch of Salt
  • 1 tablespoon Fresh Basil
  • 80 g Grana Padano Cheese, grated

Trim the bottom of the cherry tomatoes (we’ll arrange the tomatoes with the cut side down) and carefully hollow out the flesh using a teaspoon. Dust the inside of the tomatoes with salt and arrange them on a baking sheet lined with parchment paper.

In a blender, combine the grated cheese, parsley, basil, and softened butter. Remove the crust from the bread slices, chop the flesh into smaller pieces, and add them to the other ingredients. Blend until the mixture resembles breadcrumbs. Season to taste with salt and pepper.

Fill the cherry tomatoes tightly with the prepared mixture. Bake in an oven preheated to 180 degrees Celsius for about 20 minutes, until the top of the filling is golden brown. Serve immediately after baking.
