Starter with sous-vide salmon and grilled mushrooms

Delicious, simple, and exceptionally aromatic.

Ingredients

  • 2 portions
  • 100 g cooked salmon (sous-vide method)
  • 2 cups cooked sushi rice
  • 2 brown mushrooms (porcini)
  • For decoration: coriander leaves

Sauce:

  • 4 tablespoons light soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey

Preparation

Prepare the salmon and cook the rice. Slice the mushrooms into moderately thin slices and grill them on a grill pan. Combine sauce ingredients in a small saucepan and simmer until thickened. Arrange rice on plates (you can shape it using a metal ring). Arrange pieces of salmon interspersed with mushrooms. Drizzle with sauce and garnish with coriander leaves.
