  • White wine – 100 ml
  • Onion – 1 piece
  • Garlic clove – 1 piece
  • Spaghetti pasta – 500 g
  • Black pepper – 1 pinch
  • Salt – 1 pinch
  • Heavy cream (30% fat) – 250 ml
  • Grana Padano cheese, grated – 2 tablespoons
  • Smoked bacon – 200 g
  • Eggs – 3 pieces

Preparation

Step 1: Sauté bacon, onion, and garlic

  1. Chop the bacon into small cubes, then put it in a heated pan and sauté, stirring constantly, until it browns. Chop the onion.
  2. Remove the bacon from the pan and sauté the onion in the fat rendered from the bacon. Add white wine to the onions. Finely chop the garlic and add it to the pan. Sauté everything for about 5 minutes.

Step 2: Combine egg yolks, cream, cheese, and bacon

  1. In a bowl, mix the egg yolks, 120 ml of heavy cream, and grated cheese. Pour the remaining heavy cream into the pan and add the previously sautéed bacon. Reduce the heat and add the eggs with cream and cheese. Season with salt and pepper to taste. Wait until the sauce thickens. Remove the pan from the heat.

Step 3: Serve the dish

  1. Transfer the cooked pasta to the sauce and mix well. Finely chop the basil and use it to garnish the spaghetti served on plates.
