Scrambled eggs with asparagus

Scrambled eggs with asparagus – a classic dish that must be eaten at least once during the asparagus season. See how to prepare scrambled eggs with green asparagus.

Ingredients

  • Green asparagus – 1 bunch
  • Eggs – 6 pieces
  • Fine-grain iodized sea salt, to taste
  • Black pepper, to taste
  • Butter – 1 tablespoon
  • Olive oil – 1 tablespoon

Preparation

Wash the asparagus, trim the ends, and cut them into smaller diagonal pieces (green asparagus does not need to be peeled).

Heat olive oil in a pan, add butter, and sauté the asparagus for about 3-4 minutes. Crack the eggs into the sautéed asparagus and mix everything. Season with salt and pepper to taste. Serve immediately.
