Sandwich with Baked Egg and Asparagus

This delicious sandwich features a unique baked egg in a cloud, delicate asparagus, and creamy avocado. Prepare it and surprise your loved ones with a fresh idea for a spring breakfast!


  • Parisian bread roll – 0.5 piece
  • Egg – 1 piece
  • Green asparagus – 350 g
  • Avocado – 1 piece
  • Cherry tomatoes – 5 pieces
  • Salt
  • Black pepper


Step 1: Bake the Egg in a Cloud Separate the egg yolk from the egg white. Beat the egg white until stiff peaks form and transfer it onto a baking sheet lined with parchment paper. Then, create a well in the egg white and place the egg yolk in it. Bake the prepared egg in an oven preheated to 180°C for about 7 minutes, until the egg white is golden brown.

Step 2: Cook the Asparagus In a saucepan, bring water to a boil with a pinch of salt. Trim the tough ends of the asparagus and immerse them in the boiling water, making sure their tips are above the water surface. Cook for about 5-10 minutes, until the asparagus is tender enough.

Step 3: Prepare the Avocado Transfer the avocado flesh to a bowl and mash it with a fork. Season with salt and black pepper to taste.

Step 4: Assemble the Sandwich Spread the mashed avocado onto one half of the Parisian bread roll and arrange the asparagus on top. Halve the cherry tomatoes and place them on the asparagus. Finally, place the baked egg in a cloud on top of the prepared roll. Enjoy the sandwich immediately to prevent the avocado from discoloring.
