Salmon Fajitas

Delicious tortillas served with fresh avocado paste, pan-fried vegetables, and tender pieces of tasty salmon.

Ingredients

  • Red onion – 1 pc.
  • Red bell pepper – 1 pc.
  • Avocado – 1 pc.
  • Red chili pepper – 1 pc.
  • Yellow bell pepper – 1 pc.
  • Red chili pepper – 0.5 pc.
  • Tortilla – 4 pcs.
  • Garlic clove – 0.5 pc.
  • Salmon fillet, skinless – 500 g
  • Olive oil – 3 tbsp
  • Black pepper – 1 pinch
  • Lime juice – 2 tbsp
  • Salt – 1 pinch

Preparation

Mash the avocado with a fork and season with lime juice, salt, and pepper. Finely chop the chili pepper, and slice the remaining peppers into strips. Cut the onion into thin slices.

Finely chop the garlic, mix with 2 tablespoons of olive oil, chili pepper, salt, and pepper. Rub the salmon with the mixture.

Place the fish on a heated pan and fry for a few minutes on each side. Divide the cooked fish into smaller pieces. In the same pan, heat the remaining olive oil and sauté the chopped vegetables.

On another dry pan, heat the tortillas. Spread them with avocado paste and top with sautéed vegetables and pieces of salmon.
