Raw Power Courgette Pasta

Ideal for a light lunch or refreshing dinner, Raw Power Zucchini Pasta is both satisfying and revitalising. It demonstrates the versatility of raw ingredients and the potential for delicious, healthy meals that require minimal cooking.

Ingredients:

  • 4 medium courgettes, ends trimmed
  • 1 red pepper, seeded and julienned
  • 2 heaped cups baby spinach, chiffonade (very thinly sliced)
  • 1 lemon, juiced (about 2 tbsp)
  • 1 recipe hemp seed alfredo sauce (see below)
  • Small handful of fresh basil leaves, chiffonade (very thinly sliced)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Hemp Seed Alfredo Sauce Ingredients:

  • 1/2 cup hemp seeds
  • 1/4 cup nutritional yeast
  • 1 clove of garlic
  • 1/4 cup water (more if needed)
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Sea salt, to taste
  • Freshly ground black pepper to taste

Method of cooking:

Using a spiraliser or vegetable peeler, make zucchini noodles from the trimmed zucchini. If using a vegetable peeler, you can make long ribbons by peeling lengthways.

In a high-speed blender or food processor, combine the hemp seeds, nutritional yeast, garlic clove, water, lemon juice, olive oil, sea salt and black pepper.

Blend until smooth and creamy, adding more water if needed to achieve the desired consistency.

In a large bowl, combine the courgette noodles, julienned red pepper and baby spinach.

Drizzle the lemon juice over the vegetables and toss to coat.

Pour the hemp seed alfredo sauce over the courgette and toss to coat.

Add the chiffonade basil leaves and toss gently to combine.

Season to taste with sea salt and freshly ground black pepper.

Serve the Raw Power Courgette Pasta immediately, garnished with additional basil leaves if desired.
