  • Red chili pepper – 1 piece
  • Butter – 2 tablespoons
  • Salt – a pinch
  • Spring onion – 24 g
  • Grana Padano cheese – 30 g
  • White wine – 75 ml
  • Parma ham – 200 g
  • Penne pasta – 500 g
  • Canned chopped tomatoes – 800 g
  • 30% cream – 50 ml

Preparation

  1. Cook the pasta in salted water until al dente. Drain and transfer back to the pot.
  2. Pass the pelati tomatoes through a sieve. Set aside the tomato sauce. Chop the tomatoes into smaller pieces.
  3. Remove the seeds from the chili pepper and finely chop it together with the spring onion. Slice the Parma ham into thin strips.
  4. Heat a little butter in a pan. Add the Parma ham and sauté until golden brown. Add the chopped spring onion and chili pepper. Pour in the white wine and cook until the liquid is reduced by half.
  5. Add the chopped tomatoes and half of the tomato sauce. Reduce the heat, cover, and simmer for about 10 minutes. Then add the remaining butter and season with salt and pepper to taste. Add the cream, stir, and combine the sauce with the pasta.

Serving: Serve the pasta on plates. Grate the cheese and sprinkle it over the finished dish.
