Ingredients
For the batter
- Zucchini, 2 pieces
- Eggs, 2 pieces
- Milk, 2 tablespoons
- Salt, to taste
- Ground black pepper, to taste
- Garlic cloves, 2 cloves
- Smoked sweet paprika, 1/2 teaspoon
For the coating
- Grated parmesan, 40 grams
- Breadcrumbs, 60 grams
- Ground black pepper, to taste
Additionally
- All-purpose flour, 100 grams
- Salt, to taste
- Ground black pepper, to taste
Preparation
Wash the zucchinis and cut them into sticks/fries. In a bowl, beat the eggs, add milk, crushed garlic, and spices. Mix well.
In another bowl, combine parmesan with breadcrumbs, add a bit of pepper, and mix. Mix the flour with a bit of salt and pepper. Coat the zucchini fries first in the flour, then in the egg mixture, and finally in the parmesan coating. Arrange them on a large baking tray (preferably one from the oven) lined with baking paper.
Preheat the oven to 220°C. Bake the zucchini fries for about 20-30 minutes until the coating is nicely browned. Serve with garlic or tomato dip.
