Ingredients

For the Cake:

  • Sugar – 200 g
  • Cake flour – 130 g
  • Potato starch – 120 g
  • Mayonnaise – 180 g
  • Oil – 15 ml
  • Eggs – 3 pcs.
  • Lemon – 2 pcs.
  • Baking powder – 5 g
  • Vanilla extract – 2 g
  • Salt – 1.5 g

For the Mayonnaise:

  • Oil – 125 ml
  • Egg – 1 pc.
  • Mustard – 5 g
  • Lemon – 0.5 pc.
  • Salt – 1.5 g

For the Icing:

  • Powdered sugar – 120 g
  • Lemon juice – 20 g
  • Grated lemon zest – 1 pinch

Preparation

Mayonnaise:

Step 1: Whisk the Egg Yolk Break one egg and separate the yolk from the white. In a bowl, place the yolk, mustard, lemon juice, and a pinch of salt. Mix the ingredients with a whisk.

Step 2: Add the Oil Gradually add the oil to the mixture, whisking continuously to achieve a smooth emulsion.

Step 3: Continue Mixing Continue whisking until the mayonnaise reaches a thick, creamy consistency.

Step 4: Transfer the Mayonnaise to a Jar Transfer the finished mayonnaise to a jar and seal it. You can also measure and set aside the amount needed for the cake in a small bowl.

Lemon Cake:

Step 1: Whisk the Eggs In a bowl, whisk the eggs with sugar until the mixture is very fluffy.

Step 2: Add the Mayonnaise Slowly add the homemade mayonnaise to the whisked eggs. Continue mixing until smooth.
