Pompom cake without baking

Layer of biscuits, sweet coconut cream, and sweet-sour blackcurrant – flavors intertwine in this easy-to-make no-bake cake! Try the recipe!


  • Biscuits – 200 g
  • Mascarpone Cheese – 350 g
  • Heavy Cream (30%) – 330 ml
  • Coconut Flakes – 50 ml
  • White Chocolate – 150 g
  • Blackcurrant Jam – 200 g


Break the chocolate into smaller pieces and place it in a bowl. Boil water in a pot and then turn off the heat. Place the bowl with chocolate over the hot water, making sure the bottom of the bowl does not touch the water. Leave the chocolate to melt under the influence of steam, stirring occasionally.

Add mascarpone cheese, heavy cream, melted white chocolate, and 35 g of coconut flakes to the bowl. Mix all the ingredients until combined.

Divide the mass into 3 parts. Lay biscuits on the bottom of the cake pan. Spread them with blackcurrant jam (100 g) and spread the first layer of coconut mass.

Repeat the process, creating successive layers of the cake: biscuits, jam, coconut mass. Sprinkle the remaining coconut flakes (15 g) on top and decorate as desired, e.g., with coconut balls. Chill in the refrigerator, preferably overnight.
