Pork Ribs
- Balsamic vinegar – 2 tablespoons
- White pepper – a pinch
- Onion – 2 pieces
- Red chili pepper – 1 piece
- Carrot – 6 pieces
- Butter – 120 g
- Honey – 1 tablespoon
- Oil – 2 tablespoons
- Fresh rosemary – 48 g
- Salt – a pinch
- Fresh pork ribs – 500 g
- Garlic cloves – 2 pieces
- Ale – 400 ml
Potato Pancakes
- White pepper – a pinch
- Onion – 1 piece
- Eggs – 2 pieces
- Cumin – 2 teaspoons
- Salt – a pinch
- Potatoes – 500 g
- Sauerkraut – 150 g
- Wheat flour – 150 g
Preparation
Step 1: Braise the Pork Ribs in Sourdough
Season the ribs with salt and pepper. Sear them in a pan with hot oil, then transfer to an ovenproof dish. Chop the onion and garlic and sauté. Pour sourdough ale over the ribs along with vinegar. Add the sautéed onion and garlic. Place rosemary sprigs, honey, and chopped chili pepper into the dish. Braise the ribs covered over low heat for about 2.5 hours until the meat is tender. After this time, pour the sauce into a small saucepan, add 100 g of butter, and reduce over low heat until thickened. Season with salt and pepper. Grill the ribs on a grate or grill pan.
Step 2: Roast the Carrots
Peel young carrots, leaving some of the green tops. Boil them whole in lightly salted water until tender. Then wrap them in aluminum foil, add a slice of butter, and roast on a grill or bake in an oven preheated to 180°C until golden brown.
Step 3: Bake the Potato Pancakes
Grate potatoes and onion finely. Add chopped sauerkraut, ground cumin, flour, and eggs. Mix the batter. Season with salt and pepper. On a heated baking sheet or flat grill pan, bake small pancakes about 4-5 cm in diameter and 1 cm thick.
Serve the ribs with the sauce, roasted carrots, and potato pancakes.
