Fried Rice with Zucchini and Egg

Lunch? Or maybe breakfast? This simple recipe for fried rice with zucchini and egg is perfect for any time of the day.

Ingredients:

  • Rice (100 g or 1 pouch)
  • Vegetable oil (1 tablespoon)
  • Small onion (1)
  • Small zucchini (1)
  • Garlic cloves (2)
  • Garam masala or curry powder (1 teaspoon)
  • Soy sauce (1 tablespoon)
  • Sesame oil (1 tablespoon)
  • Egg (1)
  • Chopped chives (2 tablespoons)

Preparation:

Cook the rice according to the package instructions, drain it, and spread it on a large plate to cool.

In a pan or wok, heat the vegetable oil and sauté the sliced onion until translucent. Add the diced zucchini, season with salt and pepper, and cook, stirring occasionally, for about 5 minutes until the zucchini is tender.

Add the minced garlic and cook for another minute.

Add the rice, garam masala or curry powder, and soy sauce. Stir well and cook for about 3 minutes, stirring occasionally.

Create a space in the pan, pour in the sesame oil, and add the beaten egg. Once the egg is set, mix it into the other ingredients in the pan. Season with salt and pepper.

Top with chopped chives.
