Fried Rice with Vegetables and Egg

Wondering what to do with leftover cooked rice? How about preparing fried rice with egg and vegetables! Haven’t tried this combination? Then you must give it a go!


  • Onion – 0.5
  • Spring onion – 1
  • Eggs – 3
  • Frozen mixed vegetables (carrots and peas) – 70 g
  • Rapeseed oil – 1 tablespoon
  • Soy sauce – 3 tablespoons
  • Jasmine rice – 90 g


  1. Sauté the Vegetables: Heat a little rapeseed oil in a pan. Dice the onion and sauté it. Chop the white part of the spring onion and add it to the onion. Sauté for a while, then add the mixed vegetables (carrots and peas) or any other vegetables you prefer. Mix and cook until the vegetables soften.
  2. Add the Rice: Once the vegetables are sautéed, add the cooked rice and mix everything together to combine the ingredients.
  3. Beat the Eggs: Crack 3 eggs into a bowl, season with salt, and beat them with a fork. Chop the green part of the spring onion, or chives.
  4. Combine Eggs with Rice and Vegetables: Spread the rice and vegetables to the sides of the pan to make room for the eggs. Pour in the beaten eggs and mix vigorously. Turn off the heat and continue mixing until all the ingredients are combined. Add the chopped spring onion or chives and season with soy sauce. Mix again and transfer to plates.
