English Breakfast Muffins with Cottage Cheese

There’s nothing like homemade breakfast muffins! These fantastically fluffy breakfast muffins with cottage cheese are a proposal that you’ll remember for a long time!


For the Muffins:

  • Brown sugar: 1 tbsp
  • Egg: 1
  • Butter: 2 tbsp
  • Corn flour: 20 g
  • Wheat flour: 350 g
  • Milk: 230 ml
  • Salt: 0.75 tsp
  • Yeast (fresh): 15 g

For the Cottage Cheese Spread:

  • Pickled cucumber: 2 pieces
  • Black pepper: a pinch
  • Red tomato: 1
  • Radish: 6 pieces
  • Cottage cheese: 300 g
  • Salt: a pinch
  • Chive: 2 tbsp


Step 1: Prepare the Starter

  1. Gently heat the milk in a saucepan and combine it with yeast, sugar, and a tablespoon of flour. Mix the starter and set aside for 10 minutes.

Step 2: Knead the Dough

  1. Place flour, starter, egg, and melted butter in the bowl of a stand mixer. Knead the mixture using a dough hook for about 10 minutes (you can also knead the dough by hand).
  2. If the dough is too sticky, add a little flour. Cover the bowl with the kneaded dough with a cloth and let it rise for an hour.

Step 3: Shape the Dough into Rolls

  1. After an hour, knead the dough again. Divide the dough into 10 pieces. Shape each into a ball and place them on a baking sheet sprinkled with corn flour. Gently flatten each ball with your hand.
  2. Cover the muffins with a linen cloth and let them rise for another hour.

Step 4: Bake the Muffins

  1. Heat a dry frying pan on the stove for about 3 minutes. Remove from the heat. Gently transfer the muffins to the pan and bake for 2 minutes on each side.
  2. Transfer the muffins back to the baking sheet and place them in an oven preheated to 120°C (250°F). Bake for 10 minutes. Remove from the oven and let cool.

Step 5: Prepare the Cottage Cheese Spread

  1. Transfer the cottage cheese to a bowl. Add diced radishes, tomatoes, and cucumbers. Add chopped chives. Season with salt and pepper. Mix well.

Step 6: Serve the Muffins with Cottage Cheese

  1. Slice the breakfast muffins in half. Spread butter on the bottom half. Spread the cottage cheese mixture on the bottom half of the muffin and cover it with the top half.
