Broccoli Soup

Creamy broccoli soup is a true classic among this type of soups. Be sure to try how it tastes with sautéed garlic and onions, served with homemade rye bread croutons.


Creamy Soup

  • Broccoli – 250 g
  • Vegetable broth – 250 ml
  • Onion – 0.5 piece
  • Garlic clove – 1 piece
  • Olive oil – 5 g
  • Salt – 1 pinch
  • Black pepper – 1 pinch
  • Granulated garlic – 1 pinch
  • Cream cheese – 1 tablespoon


  • Rye bread – 1 slice
  • Sunflower seeds – 10 g
  • Fresh basil – 5 leaves


Step 1: Sauté Onion and Garlic Finely chop the onion and garlic. Sauté them briefly in olive oil until the onion becomes translucent – be careful not to burn the garlic.

Step 2: Cook the Broccoli Pour the vegetable broth into a saucepan and bring it to a boil. Divide the broccoli into florets and cook until tender, for about 5 minutes, in the hot broth.

Step 3: Blend the Soup Add cream cheese, sautéed onion, and garlic to the cooked broccoli. Blend everything into a smooth cream and season to taste.

Step 4: Prepare the Croutons Cut the rye bread into cubes and briefly sauté on both sides in a dry pan until golden brown.

Step 5: Serve the Soup Pour the hot soup into a bowl and garnish with croutons, sunflower seeds, and basil leaves.
