Lacking ideas for green beans? Prepare them with a slightly tangy coconut sauce and surprise your friends with an oriental flavor.
Ingredients
- Red onion – 1 pc
- Curry powder – 1 tsp
- Lemon – 0.5 pc
- Red chili pepper – 1 pc
- Red bell pepper – 1 pc
- Green beans – 600 g
- Salt – 1 pinch
- Coconut flakes – 25 g
- Sesame oil – 2 tsp
- Coconut milk – 150 ml
- Lemongrass – 20 g
Preparation
Step 1: Cook the Green Beans Clean and cook the green beans in boiling, salted water for 15-18 minutes. Drain, rinse with cold water, and drain.
Step 2: Prepare the Dressing Clean the chili pepper, remove the seeds, and finely chop. Remove the soft center from the fibrous cover of the lemongrass and chop it. Sauté with chili in hot oil for 1 minute. Add coconut milk, season with salt and 0.5 tsp curry powder. Simmer for 1 minute. Season with lemon juice and optionally more curry. Mix with the green beans.
Step 3: Let the Salad Marinate Peel and thinly slice the onion. Remove the seeds from the bell pepper and dice it finely. Mix both ingredients with the salad. Let it marinate for about 1 hour to allow the flavors to meld. Before serving, lightly toast the coconut flakes in a dry pan. Season and sprinkle the salad with coconut flakes.
