Incredibly delicate, crispy, and uniquely flavored cake with a deep chocolate taste. You can prepare it without flour, using just a few simple ingredients. Perfect sweetness!
Ingredients
For the Cake:
- Dark chocolate – 250 g
- Sugar – 150 g
- Vanilla extract – 1 teaspoon
- Egg – 5 pieces
- Cocoa powder – 10 g
- Butter – 120 g
- Ground cardamom – 0.25 teaspoon
- Wine vinegar – 5 ml
For the Cream:
- Powdered sugar – 30 g
- Mascarpone cheese – 250 g
- Lemon juice – 1 tablespoon
- Heavy cream (36% fat) – 200 g
Additional:
- Dark chocolate – 50 g
- Fresh mint – 2 g
Preparation
Step 1: Melt the Chocolate in a Water Bath Combine the chopped chocolate with softened butter in a glass bowl. Place the bowl over a pot of boiling water – this is called a water bath. Melt the chocolate, stirring occasionally.
Add cocoa powder, cardamom, and salt. Mix until all ingredients are well combined. Set aside to cool slightly.
Step 2: Whip Egg Whites Separate egg yolks from egg whites and set yolks aside for later use.
Whip egg whites until stiff peaks form using a mixer or a stand mixer, gradually adding sugar (about every minute). Towards the end of whipping, add vinegar and whip for another 1 minute. The egg whites should be white, fluffy, and glossy, with all the sugar dissolved.
Step 3: Beat Egg Yolks Beat egg yolks with a whisk along with vanilla extract until smooth.
Step 4: Combine Mixtures Add ⅓ of the whipped egg whites to the egg yolk mixture and gently fold until combined. Add the melted chocolate from the water bath. Mix.
Add the remaining whipped egg whites in two batches and gently fold again to combine all the ingredients.
Step 5: Bake the Cake Line the bottom of a cake tin with parchment paper.
Pour the prepared batter into the tin and bake for about 35 minutes in an oven preheated to 180°C (350°F). Remove the cake from the oven and let it cool.
Step 6: Prepare the Cream Beat the well-chilled heavy cream with mascarpone cheese and sugar using a mixer or a stand mixer for about 2 minutes until thickened. Towards the end of whipping, add powdered sugar and lemon juice.
Step 7: Decorate and Serve the Cake Spread the prepared cream on the cooled cake. Decorate the cake with grated chocolate on top and fresh mint leaves.
