Ingredients
- Carrot – 200 g
- Buckwheat flour – 175 g
- Baking powder – 1 teaspoon
- Baking soda – 1 teaspoon
- Cinnamon – 1 teaspoon
- Ground nutmeg – 0.5 teaspoon
- Walnuts – 45 g
- Maple syrup – 70 g
- Coconut oil – 50 g
- Milk – 50 g
- Eggs – 2 pcs.
- Dark chocolate – 100 g
- White chocolate – 50 g
Preparation
Mix dry and wet ingredients: Grate the carrot using a grater with large holes, and chop the walnuts. Transfer flour, baking powder, baking soda, spices, and walnuts to a bowl and mix well. In another bowl, add maple syrup, coconut oil, milk, eggs, and carrot, and mix well.
Prepare the batter: Gradually add the carrot mixture to the dry ingredients. Mix everything thoroughly.
Bake the muffins: Transfer the prepared batter into muffin molds. Bake for about 20-25 minutes until a toothpick inserted into the muffins comes out dry. Allow the baked muffins to cool.
Melt the chocolates: Break the chocolates into smaller pieces and transfer them to metal bowls. Then melt them in a water bath.
Decorate the muffins: Spread melted dark chocolate over each muffin. Then, using white chocolate, draw a pattern resembling a snail on the muffins. Using a toothpick, drag from the center outward several times to create a pattern resembling a spider web.
