For the original burgers, the meat should not contain any additives. Season only with sea salt (just before grilling) and freshly ground black pepper (after grilling).

- 250 g beef (meat should have about 20% fat content)
- Sea salt
- Freshly ground black pepper
Additional Ingredients
- Sesame seed hamburger buns
- Slices of cheese (e.g., cheddar)
- Slices of pickled cucumber
- Lettuce leaves
- Slices of tomato
- Thin slices of red onion
- French fries
- Ketchup and mayonnaise
Preparation
The meat for the burgers should be cold; do not bring it to room temperature before cooking.
Grind the meat and gently shape it into burgers, being careful not to compress it too much to keep it loose.
Cook without fat on a very well-heated grill pan (preferably cast iron) for about 2 and a half minutes on each side (or bake in the oven at 190 degrees Celsius on a baking sheet for about 4 minutes on each side). Just before cooking, season with sea salt (only on the side that will be cooked first; season the other side on the pan just before flipping the burger). After flipping the burger on the pan, place a slice of cheese on top.
Slice the buns in half, toast in a toaster or brown on a pan, or optionally, place under a heated grill in the oven.
Lightly spread mayonnaise on the bottom half of the bun. Place a slice of pickled cucumber and the grilled burger on the bottom half of the bun. Season with freshly ground black pepper, spread ketchup, and arrange the vegetables: tomato, lettuce, and half a thin slice of red onion. Cover with the top half of the bun and press lightly.
